The Chefs at Blair Hill Inn


Chef James Varon

We are so please to welcome back Chef James Varon.  Returning for his second season, Chef Varon comes to us from Philadelphia, PA.  James is a young, up-and-coming chef who worked as Sous Chef for the White Dog cafe and, more recently, the Hungry Pigeon in Philadelphia.  James delighted our guests last season with his culinary perspective that pairs rustic, healthy foods with a refined, upscale flavor profile.  He is seriously passionate and never cuts corners as he brings a fresh, current style to all his dishes.

Chef Lawrence Klang

New this season, we are proud to introduce Chef Lawrence Klang.  An award-winning, Cordon Bleu of London England trained chef, Lawrence has deep roots in Maine's food scene combined with international experience and repute.  Known locally for his work as Executive Chef of Natalies restaurant in Camden and then Portland's Temp Dulu, Chef Klang brings a wealth of experience to our team.  He has presented at the James Beard House and has cooked alongside world renowned chefs Thomas Keller and Jean-Georges Vongerichten.  Classically trained, he is willing to stretch his culinary limits beyond his immediate surroundings.

The combination of these two highly talented chefs is sure to elevate Blair Hill Inn's cuisine to new heights.  Chef Varon's youg and brilliant culinary perspective paired with the vast experience of Chef Klang, both abroad and at home in Maine, will be inspirational.
